You just have to hang out in La Boca and when they start to dance focus your camera and start shooting one photo after the other, actually without interruption.There will always be some photos that turn out good. I heard about this. Speaking of Latin American music, you had the great singer Carola Standertskjöld who sang many songs in Spanish, and I especially like her version of Perfidia.
